Microwave Tuna Pie

Take 1 slice of bread, soaked in a bit of water and mashed

1.5 Tablespoons finely chopped onion, cooked in microwave with a little bit of butter/margarine (1min High)

2 large eggs

1 good Tbs flour

1 good Tbs mayonnaise

1 cup milk

1tin (270g) flaked tuna (in brine NOT oil), drained

1 cup grated cheese

salt, cayenne pepper (or black pepper to taste)

1Tbs capsicum finely chopped (if available)

In a large bowl, beat the eggs with a fork, mix in flour and mayo. Stir in the milk, salt, pepper.

Add the rest of the ingredients (tuna, onion, capsicum, cheese, bread).

Mix well and pour into microwave proof pie plate.

Microwave on M-H (75%) for 4min, stir partially set outside towards centre of pie plate.

Add more grated cheese on top and sprinke with paprika.

Microwave on M (50%) for 14min, then on H (100%) for 2min before serving directly from dish.

Serve with green salad or peas and chips
